Choice from 3 is good, 180 would be a mistake IMO

A 3.2 mated to a manual box would be the winner for me.
But 225 1.8T Bam should be a lot of fun too, especially when the turbo kicks in. Also lots of tuning options. I've heard one person who had a few TT's say they can hardly tell the difference between the 150, 180, and 225 but I find that hard to believe. Possibly true to a degree due to the 150 being FWD and having less weight. EDIT - changed my mind. 225 manual for me please. Less nose heavy, more availability, better bargains to be had, easily tuned for better performance than the V6, and less thirsty. Only drawback is the sound of the engine, not as nice is the V6.
