I wouldn't recommend attempting to take the flange off.

Slide back the rubber boot. Undo the wiring plug first.

The sensor just unscrews - 29mm socket / spanner.

Yep no need at all to remove the flange

Just a world of hurt that way if it goes wrong

Sorry, maybe a stupid question but I'm no mechanic! Do I need to drain the water to change this part?

just the sensor?

No, a small amount will come out but not enough to justify draining it, just have the new part good to go straight in.

Needless to say, do it with the engine cold

No just have the new one ready to go in, as Royston said get the fuel pipe out the way.....with the dipstick removed make sure the tube is covered/blocked so you don't get petrol down there!
Hopefully you'll only lose a small amount of coolant as you swap the part but worth while after it's fitted raising the expansion tank and loosen the heater and rad bleed points to get any air out.......you'll likely need to top up a little.
