Does anyone know what the oil pressure should be hot and cold, ie at idle & reving at say 3,000rpm (max & min) ?

Oil pressure min with hot engine at 2000rpm is 1.6bar. That's min tho, a good engine should be giving around 3bar lowest at 2000, upto 4+ higher up. Unless totally knackered, the oil pressure at cold start will be off the guage, over 5bar. This is due to the thickness of the oil when cold. At idle when warm you should have around 1.5bar - 2bar if the engines in good nick. If oil temp over 130degrees, like after a run, it may drop to just over 1.2 ish.

Cold i have 4 bar at idle and over 5.5 reving

Hot , fan cutting in 1.3 at idle 3 reving

The problem is it is alarming for high oil pressure, i have tried new switches, even disconnecting them all dosen't stop the alarm (or connecting them to earth) The pressure relief valve is free as well, new oil and filter

Do you have access to a spare dash pod you could try in it? The circuit inside can fail causing this fault. If you've not got one, don't go buy one. I can find the wiring diagrams for you so you can test the whole system to be certain before you spend any money!
