After placing a bolt in the wheel I first thought i was going to still have enough length, but then noticed that some of that thread is going to be lost by the thickness of the brake disc.

Clean up a standard bolt, put some graphite gease in the hub thread, and re-fit the standard alloy... This'll give you a good idea how many threads 'bite' on the hub.
And
Yes you can buy longer bolts, but make sure the bolt head angle matches the alloy...
